Canja : a very special Portuguese Chicken Soup
Ingredients:
1 small organic chicken or 2-3 pounds bone-in chicken parts
1 medium onion, leave whole
1 large garlic clove, leave whole
salt, to taste
2 egg yolks
1-2 large lemons, juiced
1 large lemon cut into wedges
1 cup medium-grain rice *see below
Need to have ready:
Please note, before cooking with rice I highly recommend rinsing it several times, until the water is clear. Also please check the rice and remove anything that isn’t rice…but we will discuss further.
